Would you rather compete for a listing on the first query or the second? It's going to be easier to get listed under the second more specific query.
Some niches are more popular and thus more crowded then others. The more crowded with competitors the harder it will be for you to rank well. For instance something like weight loss is much more overrun with websites then butterfly collecting but there is also most likely more people searching about weight loss then butteryfly collecting.
Choosing the right niche with the right amount of supply and demand can mean the difference between a successfull website and a complete failure.
